    Quicke's cheddar with spiced apple (pg 36) was the first recipe in this book that I had the ingredients for. (The book was just released in the US and I had been impatient to receive it.) I had to substitute Montgomery's cheddar for Quicke's cheddar, but I can repeat the recipe with the preferred cheese (or any of the remaining 8 suggested substitutes). The spiced apple is a simple brown sugar, cinnamon, and nutmeg apple. I'll admit to not having any "white bloomer bread" but I'm sure my simple, rustic Italian white bread was a reasonable substitution. The result was a delightful, open faced, melted cheese sandwich. Excellent ... and it looks like I'll be trying many of the recipes in this book. It was worth the wait.
