      They were great! Not too sweet. I was able to mix/rise the dough in my bread maker without any issues!

  • New York-style bagels

      Not sure if this recipe is supposed to be a quick method to achieve bagels or this is genuinely how the author makes his bagels at home. The result was edible but subpar. Shaping the dough after it has already risen for an hour results in a flat top which the additional 10 minutes of rising after cannot remedy. This if further underscored by the 2 minutes of boiling time for the dough on each side. The crust sets so thickly, the dough no longer expands to at least round out the dough's surface. Because this book also talks about baking as therapy, there is a note that the feeling of frustration lasts 90 seconds and a suggested breathing exercise to do while waiting for the dough to rise. Instead of helping me reduce frustration through baking, these bagels increased my frustration because I experience another 90 seconds every time I look at the sad dimpled buns I ended up with. If you're looking for a solid bagel recipe, this is very much not it.
