    Korean beef tacos (pg 100) steak (soy, honey, garlic, ginger) with cabbage (cilantro, avocado) and sriracha-lime dressing. It tasted as good as it sounded ... and tasted authentic some-ethnicity rather than forced fusion.

      Didn’t have any fresh cilantro, substituted half a teaspoon of dried with 1 teaspoon of fresh mint, and 1 teaspoon of fresh basil. Delicious.

      Hard to know if the recipe itself was what worked so well- I made the chicken in the instant pot and added black beans and nectarines at the end (I’m allergic to pineapple). Overall the idea is great!
