Horrible. Chewy, tasted raw (even though I cooked it for longer than the recipe stated). I tried to like it but after two mouthfuls it all went in the bin.
I liked the idea of this as a light meal, and it was pretty much as I expected. Nothing standout, but nice for a change. The koftas came out well.
This was decent for a healthy snack (I made it into a fast day meal by adding more crudités). The yoghurt/peanut butter dip was alright.
I made this as a meal for a fast day, as it was about 300 calories. There were things I liked about it, but also some issues - there seemed to be too much sauce for the pancakes, so there was no gratinée and they were quite soggy. The whole thing also needed a lot of seasoning. I might try again but with a modified recipe: less sauce, more seasoning and maybe some ham in addition to the spinach and ricotta.
