  Absolutely delicious way to roast a chicken! I spatchcocked the chicken because that’s my preferred way, but it did make it hard to stuff the apricot paste under the skin. Next time I’ll half the apricot paste, it would be quite enough. Do watch the browning due to the sugar content in the paste.
