    Meh … I didn’t care for these. Taste was fine, but the texture was too … squishy. And I started with under-ripe pears. I expected these to have a snap but they are ultra soft. Not for me.

    This is probably the best of the country-style terrine’s I’ve ever made, and it makes a terrific filling for a Bahn Mi, too. It’s simple and fast is just a bonus.

• Mustard vinaigrette to make a salad for any season

    Was cautious about the amount of mustard but the Dijon worked and made it creamy. Used less mustard than called for but will try closer to the full amount next time and adjust from there.

• Green bean, peach, and almond salad

    Nice summer side. Light, fresh, interesting and healthy. Was easy to prepare and serve when you were ready - just make the green beans and vinaigrette ahead. Used regular yellow peaches that were ripe. The sweetness offset the vinaigrette. Used chopped Marcona almonds.

• Anchovy, egg yolk, and hazelnut pasta

    Delicious & quick.... would use a touch less anchovy but increase the pepper and hazelnuts next time.
