    Creamy sausage, mushroom and spinach spaghetti: made with veggie sausages, spring onion and leeks. Had no spinach or kale so left it out - I would have liked but not sure about kids. Used vegan cream cheese, vegan mozzarella and nooch. Used fusilli instead of spaghetti. This went down well, would make again.

    Herby roast vegetable risotto - made with mushroom and butternut squash (roasted from frozen). Left out garlic. Only 1 stock cube used. Not too difficult for a weeknight although requires some attention for stirring. Easy to make vegan version by leaving out cheese (could add nooch?) Toddler wolfed the rice down and ate some squash. Good reviews all round. Generous portions. Could easily sub different veg.

    Gnocchi with spinach and pesto - this recipe will either infuriate or delight you depending on your frame of mind as it barely qualifies as a recipe. However this is the kind of fast tasty weeknight food my family enjoys. Just a warning that shop-bought gnocchi tends to have milk in - no good for M (substitute pasta).

    Pan-fried pork and halloumi spaghetti - made with veggie sausages as per the swaps. We liked all the components of this but it just didn't work for us as a dish. I like a sauce with my pasta and ended up adding some olive oil because it was so dry. I also had a slight issue with the instructions - surely you need to flip the sausages so that they brown on both sides? Won't repeat as written.

    Melt-in-the-mouth bean burgers with sweet potato fries - These burgers were unfortunately a bit bland - not the best veggie burgers I've ever made (I used half kidney beans and half black-eyed peas). The sweet potato fries were excellent, I'd use this method again.

      Made without garlic, shallots and celery for onions, tomato puree. M1 commented it tasted sweet from the red and yellow peppers, maybe should have upped the lemon juice but was wary of kids not eating. She didn't like the celery. M2 didn't like the rice but did like the chorizo and prawns. DH and M1 would eat again. Took me about an hour total as I hadn't prepped.
