    Tomato Carpaccio with Stracciatella Crispy Chickpeas and Fried Rosemary: A wonderful way to use peak season tomatoes. Used burrata as I had it on hand, and served it on a bed of arugula. Looked lovely and had a nice mixture of textures and flavours. A high summer treat!
