This is a fantastic salad. I had parsnips and Mr VT had roasted carrots. The red chicory was incredible with the parmesan sauce and next time I'll double the amount of chicory. I wonder if it's possible to make this even healthier but upping the greek yogurt and reducing the mayo? I was also thinking it might be nice with a selection of root veg - beetroot, carrot, parsnip and sweet potato ... although now we are heading into new recipe territory. I will make this again! I think it does need a protein of some sort on the side.
