    Excellent rice & beans side dish. I modified for canned red kidney beans, which decreased the preparation time.

    This is a fabulous gratin. In the Caribbean they serve it with Easter lamb, but I think it is a perfect autumn side dish. My yams were a little sweet and I cooked the onions for five minutes so they were slightly caramelized.
