      Easy one pot meal (or two pot if you make the chickpeas in an instant pot - and then I used the cooking water in the pasta).

      Tasty! Quite a bit of chopping but nothing too strenuous. Good flavor! Added cilantro for garnish and would again. Next time might use sliced or slivered almonds. Jicama would be a nice addition as well for even more crunch.

      I made this for extended family in town for my daughter’s graduation and it was very simple and quite tasty. Fed 8 of us with leftovers which held up. Even my picky son enjoyed it. Definitely a keeper.
