  • Chai-spiced overnight oats

      I love chai, but I do not like the flavour and texture of these oats. Way too much vanilla flavour, but I would be able to handle that. The very slimy texture, I cannot. I didn’t mix in the fruit to be refrigerated because I forgot to defrost the blueberries. Maybe that’s what went wrong? Will probably not be trying again. I have a better recipe for overnight oats in my ‘brunch with brother Marcus’ cookbook.

      This is an easy make ahead breakfast. I double it and it fits in my deepest 9x13, although I do mix the components together (including the egg mixture) in a large bowl and then add it to the pan to avoid a big mess. A double recipe is 16 servings, so I portion it out when it’s cool and freeze 4 servings together. Easy to thaw and reheat. Only modification I make is adding in crushed red pepper.

      A delicious recipe that is really easy to prepare. Amazing side salad.

      Meh. Solid stir-fry technique, but overall the dish lacks fat and salt, resulting in a sauce that is at once bitter and bland. A drizzle of a chili crisp oil would work well for the fat and a help with flavor and more soy sauce or a bit of MSG would help with the blandness. The fat isn’t just a flavor thing - many of the vitamins in the veggies are fat soluble, so having a bit more healthy fat is a win win.
