    Cuban enchiladas (pg 150) are filled with a ground sirloin mix similar to a picadillo with a tomato sauce with onion, bell pepper, garlic, capers, manzanilla olives, raisins ,,, in other word, the sauce is where a Cuban enchilada is clearly different from a Mexican enchilada. This is a very nice recipe that was enjoyed by all but not really a replacement for the Mexican variety.
