    Extra-creamy chicken piccata: This recipe was featured in The Splendid Table newsletter. I found the 5-7 min cooking time per side for the chicken cutlets to be a little long. 4 minutes per side was fine. I also cooked the sauce down for more like 5 minutes rather than 2 to achieve a thick texture. Easy, good.
