Enjoying re reading the first section. It is an inspiring read. Stopped baking a while back and I really miss it so a new sourdough starter is on order and off we go again!

A wonderful read. The first half demonstrates how baking is good for one's mental health. I recommend it to anyone struggling with their mental health who wonders if baking could be a feature of their treatment protocol. It likely is. The second half a varied selection of recipes for great bakes. This has become my go-to-book for breads surplanting my previous go-to. It sits a top of a pile of baking books in front of me whenever I sit down to relax and brings a smile to my face.

An excellent example of the no-knead method of bread making.

I can’t believe how well this recipe / method turned out and how easy it was! My first time ever making bread and the finished loaf was great, good texture and taste with a delicious crunchy crust. I made the Pain de Campagne variation but as I only had wholewheat bread flour I subbed the white bread flour with ordinary plain white (all purpose) flour and it worked fine. I’ll definitely be making this again and again and trying out more recipes in this lovely book.

Like this recipe a lot, so easy. Prefer to use it as a sandwich bread. Not my favorite to use for focaccia, but still good.

  • Miso and toasted sesame sourdough

    • Astrid5555 on August 11, 2022

From time to time I follow a recipe when baking bread, and this one was definitely worth it. The miso/black sesame seed combination is just perfect and the loaf was gone within 2 days.

  • Cheddars

Just made these. Incredibly easy and really delicious. Made the marmite version which has been a huge hit. Will be making more tomorrow as these are not going to last long!

      brilliant!

  • Blondies with a Marmite glaze

    • ChelseaP on August 15, 2022

The marmite glaze is a nice touch and since there’s no salt in the batter it helps stop them from being too sweet. There didn’t seem to be much batter for the tin size and my blondies didn’t really rise at all which has made them a bit dense. Not sure what went slightly wrong here… We’ll still eat them all though so no harm done!

  • Caramelised banana bread

    • Ajammies on January 04, 2025

So good! I made with vegan butter and 1 tablespoon of almond butter. I only had cinnamon also.

James Beard Awards 2023 nominee - Bread category
Shortlisted for the 2023 Andre Simon Best Cookbook Award

A cookbook full of heart that explores the redemptive power of baking.

Kitty Tait grew up a funny, chatty redhead who made everyone in her family laugh. But around the time she turned 14, Kitty began experiencing anxiety. Slowly, she disconnected from everyone around her and struggled to wake up, get dressed, and leave the house. Full of worry, her parents tried everything, from new hobbies like reading and painting to medication and visits to a specialist. Nothing seemed to help.

Then, one day, as Kitty stood on a stool watching her dad mix flour, water, and salt, she determined Al's gloopy, sludgy blob of bread looked a whole lot like her brain. The next day, peaking under the tea towel as the mix gently bubbled and popped, Kitty came to a stunning realization: bread is alive. Al asked Kitty if she'd like to try baking bread herself, and their lives were never the same again. One loaf quickly escalated into an obsession, and Kitty felt better than she had for a long time. Within nine months, Kitty and Al opened The Orange Bakery--and they haven't stopped since.

Featuring more than 80 recipes-including cinnamon buns, cheese swirls, and tahini brownies-Breadsong is a celebration of bread and baking, and an inspiring story of the life-saving power of discovering a passion.
