    CHICKEN CROQUETTES (CROQUETAS DE POLLO): Really great and different use of shredded leftover rotisserie chicken. I’ve been making korokke since my teens, so this was straightforward for me. Compared to creamed crab korokke, the chicken makes them less fragile when forming the pieces and frying. Be warned though that you’ll end up washing your goopy hands often when shaping them. I added chicken soup granules and Accent to the mixture. Squeeze of lemon before serving or go Japanese and use tonkatsu sauce.
