Looking for a recipe from this book - Chicken Cacciatore. It is in casserole form, uses boneless skinless breasts, and includes artichoke hearts. Could anyone get this to me? I am new to this site. TIA

  • kbrooks on April 07, 2025

Parmesan vinaigrette pg.126. Nice balance of flavors. Used extra virgin olive oil instead of vegetable oil. An easy go-to salad dressing.

  • kbrooks on April 07, 2025

Grand Marnier Ice Cream pg.422. This ice cream is exquisite. Recommend straining the custard after adding the liquor, before folding in the whipped cream.

  • kbrooks on April 07, 2025

Maui Ribs pg.331. Another great marinade in this book. Definitely marinate overnight. I do the ribs in the oven.

  • kbrooks on April 07, 2025

Marinated Flank Steak pg.300. Great marinade. Also works with skirt steak or flat iron steak. We don't have a barbecue, so I use a grill pan on the stove.

  • kbrooks on April 07, 2025

Chicken Wellington pg.260. Oh my yes!! Made this exactly as written. Delicious and impressive.

  • kbrooks on April 07, 2025

Red Snapper Ole pg.241. We were underwhelmed by this.

  • kbrooks on April 06, 2025

Shrimp a la Francaise pg.237. OK. Probably won't repeat.

  • kbrooks on April 06, 2025

Potatoes Whipped with Cheese pg.196. Love this. Subbed red bell pepper for the green. Omitted the pimento.

  • kbrooks on April 06, 2025

    Normandy French Beans pg.189. OK

  • kbrooks on April 06, 2025

Green Beans with Tomato Vinaigrette pg. 188. Very good side. We decreased the oil to 1/2 cup and increased the vinegar to 2 Tblsp.

  • kbrooks on April 06, 2025

Bombay Pilaf pg.170. Really good pilaf. Add some chopped apple and or chives for variety.

  • kbrooks on April 06, 2025

Spinach Crepes pg.143. OK. Used gruyere cheese and fresh spinach. The filling is quite good. The sauce needs a lot of help. Quite bland.

  • kbrooks on April 06, 2025

Confetti Eggs pg.135. Basic frittata style eggs. Vary topping with grated cheese.

  • kbrooks on April 06, 2025

Spinach Salad with Chutney pg.124. Lively dressing. I sometimes sub slices of avocado for the mushrooms, or use both.

  • kbrooks on April 06, 2025

Caprice Spinach Salad pg.121. Colorful and tasty. We substitute balsamic vinegar for the cider vinegar, and maple syrup for the sugar.

  • kbrooks on April 06, 2025

Fire and Ice Tomatoes pg.104. My mom always warned against refrigerating fresh tomatoes. This recipe is the exception to that rule. This is unusual and terrific tasting and best made with heirloom tomatoes or perfectly ripe farmers market tomatoes.I use orange or yellow bell peppers as we prefer the taste. Use a good wine vinegar.

  • kbrooks on April 06, 2025

Sweet and Sour Avocado pg.57. Nice salad. Use cider vinegar.

  • kbrooks on April 06, 2025

Won Tons pg.46. We love these! When in season, I substitute dungeness crab in place of the shrimp.

  • kbrooks on April 06, 2025

Black Forest Ham Rolls pg.37. Great make ahead appetizer and perfect dish for a picnic. We don't see the need to serve on bread or crackers, just serve with toothpicks.

Notes about Recipes in this book

  • Black Forest ham rolls

    • kbrooks on March 23, 2026

These make a great appetizer. Perfect for pot luck or picnics. They can be made ahead and they freeze well.

  • Won tons

    • kbrooks on March 23, 2026

Delicious appetizer or dish as part of a Chinese dinner. I've made these with both shrimp or crab.

  • Sweet and sour avocado

    • kbrooks on May 02, 2026

The dressing overwhelms the taste of the avocado.

  • Fire and ice tomatoes

    • kbrooks on March 23, 2026

Terrific salad! I use farmers market heirloom tomatoes. Substituted yellow or orange peppers for the green. Plan ahead as it needs to chill for 24 hours.

  • Caprice spinach salad

    • kbrooks on March 23, 2026

Very nice spinach Salad. I replaced the apple cider vinegar with balsamic vinegar and the sugar with maple syrup. Used a dash of celery bitters instead of celery salt.

  • Spinach salad with chutney

    • kbrooks on March 23, 2026

Tasty salad. I added sliced avocados and omitted the mushrooms. The chutney dressing is delicious!

  • Parmesan vinaigrette dressing

    • kbrooks on March 25, 2026

Delicious dressing. The only change I made was to use extra virgin olive oil instead of vegetable.

  • Confetti eggs

    • kbrooks on March 25, 2026

This was OK. Pretty but pretty ordinary. I added some grated cheese which helped, but probably won't make again.

  • Spinach crepes

    • kbrooks on March 25, 2026

My husband liked this; I didn't. I substituted gruyere for the Swiss. Other than that, no changes to the recipe. The sauce needs serious help. I'm not willing to tinker with it as I have a much better spinach crepe recipe I've made before.

  • Bombay pilaf

    • kbrooks on March 25, 2026

Really good exactly as written! Sometimes I add chopped apple and/or chives.

  • Green beans with tomato vinaigrette

    • kbrooks on April 30, 2026

      Delicious!

  • Potatoes whipped with cheese

    • kbrooks on March 26, 2026

Delicious! I substituted red bell peppers for the green and omitted the pimento. Sometimes if I'm in a hurry I smash the potatoes rather than whip them for a chunky casserole.

  • Red snapper olé

    • kbrooks on March 26, 2026

This was a thumbs down in our house.

  • Baked sole with creamy leek sauce

    • kbrooks on April 10, 2026

I love seafood, but this just didn't work for me. The creamy leek sauce was good, but, for me, it overwhelmed the sole. On the other hand, my husband, who is not a fan of fish, really liked it. Probably because he couldn't taste the fish! Won't be making this again.

  • Chicken Wellington

    • kbrooks on March 26, 2026

Oh my yes! Didn't change anything. Definitely will make again.

  • Marinated flank steak

    • kbrooks on March 26, 2026

Great marinade for flank steak, skirt steak and flat iron steak.

  • Maui ribs

    • kbrooks on March 26, 2026

I marinated the ribs overnight and baked them. Really delicious!

  • Grand Marnier cream

    • kbrooks on March 26, 2026

      Absolutely exquisite!
