    Yesterday I baked "Fresh Apple Cake" from page 14, the recipe from this book that I've made again and again over the years. It's one of my go-to cakes; I especially like that it can all be made in one bowl and comes together quickly when I have friends coming over unexpectedly or want to bring something with me as a gift but don't have much time. People love it too. I've omitted the nuts/lime zest when I didn't have them to hand, and the cake is still good, but use them for sure if you have them. The batter is thick but don't let that deter you, it works - though check it often, about 5-10 minutes before the end of the cooking time, it often cooks faster for me but I'm not sure if that's just my oven.
