Eggplant appetizer a la Justin, p.9, very nice hot, better cold. I'd broil the eggplant rather than fry. Boiled shrimp in shell, p.43, meh, I'd halve the recipe.

Publishers Text

For over fifty years, Justin was in heavy demand as a master of ceremonies at conventions, parties, political rallies, beauty pageants, you name it. Even after his death on 5 September 2001, his cooking show continues to be tremendously popular, and Justin leaves a legacy of having brought Cajun food to the world outside south-east Louisiana. Justin Wilson's eight cookbooks are all unique, entertaining, and at the same time completely authentic. The meals you cook from this book are sure to go down in your gustatorial memory as the most exciting and interesting you have ever cooked.
