    Beignets (p. 216): I have not had the privilege of trying the beignets at Café du Monde in New Orleans. I have ordered them at other restaurants around the country, so based on those experiences, I feel that this is a decent recipe. These are also easy and fairly quick to make. The dough is quite soft, and I find a metal dough scraper is handy at these times when kneading is a messy operation. I also didn't use a quart of oil. I filled a saucepan 1& 1/2" deep with canola oil and it worked just fine (I only fried 1 or 2 at a time). They were a nice ending to a New Orleans-style breakfast!
