    Diana's favorite chai (pg 33) -- the first spiced chai I learned to make had peppercorns, cinnamon, cloves, cardamom, optional allspice, and optional star anise. My son still uses that recipe to impress his South Asian friends. This recipe is very similar using fresh ginger along with peppercorns, cinnamon, cloves, cardamom. Adjust the sugar to your taste not the authentic South Asian taste.
