      I made these cupcakes with the peanut butter frosting from the Peanut Butter Cupcakes. The cupcakes were a bit on the dry side. I have other chocolate cupcake recipes that I'll be using instead of this one.

      Love these muffins! I froze most of the batch a day after baking so in the morning, I just pop one out while I get ready for the day. I microwave it for about 10-15 seconds before eating & it's an absolutely delicious morning treat!

      This recipe seemed so intriguing, but did not end up like I expected. I made the muffins according to the recipe, although the recipe made 2 dozen muffins instead of 1. When I first took a taste, I was so disappointed. Something was missing. Was it the lack of sugar? Not enough salt. I couldn't put a finger on it. I didn't want to toss them as a failed experiment, but they just didn't have enough flavor. Then a friend suggested a brilliant addition: lemon glaze! So I added my favorite lemon glaze & it is just what was needed! So while these are cooling on the rack, whip up a quick glaze with 1 cup confectioners sugar, 2 tbsp lemon juice & 1 tbsp milk. You won't regret it!
