    Name Day Breakfast, pg.131. All the breakfast flavors in one dish. I eliminated the teaspoon of water and made this as a frittata, cooking on the stove top just until barely set and finishing in a 400F oven. Also added some cheddar cheese with the ham and bacon.

    Tossed Eggs with Shallots, pg.129 Nice fresh flavor with all the fresh herbs. I add a splash of milk or cream when I whisk the eggs.

    Ham with Cream, pg. 294. This looks a bit weird/curdled when it comes out of the oven, but it tastes wonderful.
