    Meal-corn cou-cou (pg 312) is Caribbean polenta (with okra) with a stew with instructions to add other ingredients of your choice i.e. a good recipe for cleaning the vegetable drawer. This is a very solid recipe that I am unlikely to return to simply because I have so many excellent stew recipes.
