    Yes, this is a humorous cookbook, but in my library it still must provide recipes worth trying. Mex-icon corn casserole (pg 88) is a layered casserole - one layer is rice and sour cream, the other layer is corn, green chilies, and Jack cheese. topped with cheddar and cilantro. This is an enjoyable dish that could be taken to a potluck, for example. But I was not impressed.
