This cookbook was inspired by my best friend who happens to be a vegetarian and allergic to milk, casein to be exact. So you may think, "OK, big deal just don't buy anything with milk in it." Turns out that casein is a very popular protein used in everything from preservatives to one of the strongest glues you can buy! Even foods labeled as vegetarian contain casein; it can all be very confusing and misleading. This is unfortunate for someone that actually has a moderate to severe allergic response to casein. Eating out becomes virtually impossible unless there is a vegan restaurant nearby. Even going to someone's house for dinner is risky if they aren't familiar with the product screening process. It seems that allergies are becoming more and more predominant, and the severity in some cases can be life threatening. As a result, I decided to write down a few recipe ideas for those that have an allergy to casein themselves, or would like to cook for someone that does.
