    Pickled chantarelles (pg 92) here the mushrooms are pickled with a spice mix of onion, rosemary, black pepper, vanilla, cloves, ginger, allspice. While this produces a very nice pickle, I prefer the chanterelles pickled with fir shoot in most situations. But the use of a vanilla pod gives these pickles an upscale aspect when you don't want to appear rustic.
