    Fun trying the wide variety of sandwiches in this book. Tonight's was Maryland Chicken Sandwich - "Maryland" referring to the fried bananas that were a surprisingly great component as the final layer of the tall stack of ingredients on a bun. Bun, lettuce leaf, potato patty (with onion, corn), chicken strips, sliced tomato, fried banana slices, Top Bun. I cautiously served the stack w/o bananas, and we each added some after a plain first bite. Then quickly spooned fried banana onto the rest of the sandwich.
