  • Polenta chips

      Ended up making polenta cubes for an antipasto entree. Worked a treat - especially nice with roast peppers.

  • Braised quail wrapped in pancetta (Quaglie brasate con pancetta)

      Bought quail on special at the supermarket, not deboned of course. Not an easy job. One slice of pancetta wasn't really enough to wrap one of these little birds and I ended up tying them up with string. Quite nice but I doubt I'll make it again.
