      I did the pork variation and used fresh Thai peppers (a little less than the 5-10 recommended) and Holy Basil since I was able to find it. Next time I will use more peppers as this could have stood with a bit more heat. The kaffir lime leaves and Holy Basil add a very special nuance - but for everyday cooking, I think it would be fine to substitute a combination of Thai basil and mint and lime zest. This was a truly delicious dish and I would make it again.
