      Fabulous omelet, savory and yet rounded. I adjusted the quantities to suit my taste and the size of my fennel bulb. The sweetness of the fennel mellows the sharp bite of the olives. The combinations of the eggs with the savory filling is both savory and comforting. Savory, salty, sweet, tart, warm and creamy, this hits all the notes and would make an absolutely fabulous supper with a salad on the side, completely satisfying.
