      Great, flavorful lunch recipe. I've made this several times without the cucumber and with dried oregano instead of parsley (as shown on the website link). This is a good template to add additional vegetables.

      Very good but add 1 Clove crushed garlic to the vegetables and increase the Chile powder to 1 teaspoon. A lot of the flavor comes from the salsa added.
