  • Braised pork (Carnitas)

      My pork shoulder weighed 2.75 lbs, so I halved the other ingredients, using 1 chipotle chile. I used canned low-sodium chicken broth, but in hindsight full-salt broth would have been better, as no extra salt is called for. Served with salty toppings (crumbled feta, salsa), the carnitas were tasty. The method was very easy.

      My favorite carnitas recipe. Very much not an "orthodox" carnitas method as the pork is braised in a spicy broth instead of in lard, then crisped up in a hot oven. But it yields juicy, tender, tasty carnitas. And for the lovagod, do not discard the porky, chickeny, spicy broth! I defatted it and cooked some black beans in it with plenty of garlic and a chopped green pepper. Almost better than the meat!

  • Seasoned roast beef (Barbacoa)

      Far too much clove called for, a whole tablespoon of whole cloves (which you then grind) goes into the sauce/paste.

  • "Drunken" beans (Frijoles borrachos)

      I used canned low-sodium chicken broth and needed to add some salt (and added some pepper as well), but otherwise these beans were very flavorful. I had to stir in extra water towards the end of cooking so the beans wouldn't scorch.

      Quick, easy, refreshing, not too sweet. I did not strain the fruit pulp.
