    The orange thyme combination of flavors worked brilliantly. I did the brining for 3 hours with 1 cup kosher salt and two quarts water for two game hens. I used low sodium chicken broth and did not do the final seasoning at the end and it was just right although maybe a bit on the salty side. My family said I could have even skipped salting the birds before they roasted and it would have been fine. I used fresh herbs from my garden and they really pumped up the flavor of the sauce. I will make this recipe again.
