Noodles with meat sauce (Shaoz mian) from Mrs. Chiang's Szechwan Cookbook: Szechwan Home Cooking by Jung-Feng Chiang and Ellen Schrecker and John Schrecker

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

The recipe calls for a total of 5 TBS of soy sauce plus another tsp of salt! I used only two Tbs of soy (and no salt) and that amount, along with the saltiness of the chili bean paste, was plenty enough. Plus, I also added a small amount of tofu cut into small cubes and a few Tbs of unsalted chicken broth and simmered for a few minutes at the end. So I can't imagine just how salty this dish would be with the full 5 Tbs and just the meat. With the salt adjusted, it was a nice, easy dish. I liked my addition of a bit of tofu and broth.
