    I used fresh oregano & added the suggested corn as well as a handful of black beans from the freezer. 1/3 of this recipe (ie 1/2 cup of rice) is plenty for the 2 of us. And I changed the amt of stock - in my rice cooker, the rice to liquid ratio is 1: just over 2...which is not the ratio used here. Very nice beside some BBQ'd pork and certainly worthy of repeat.
