    This is a great way to use up a lot of veggies hanging around in the fridge, especially during late summer. I've only made the variation with summer squash (rather than winter). Delicious, and healthy--though I make it slightly less so by adding pancetta at the beginning of the saute, to add some extra depth of flavor.
