    These are pretty good, comes together much faster than the Cook's Country one, but not as moist. They are healthier because of the whole wheat flour and the oil used in place of butter. I like the texture better because the nuts and shredded coconut as left as is, not ground to a powder, I toasted both to add flavor even though that is not called for in the recipe. Will try to substitute part of the shredded carrot with crushed pineapple next time to add moistness.
