    Gorgeous tiny (2-bite) sandwich cookies with a dense chocolatey flavor which is enhanced by the subtle creaminess of the caramel mascarpone cream filling. Because the cookies didn't spread in the oven, I slightly flattened the next batch with my fingers before baking, for a better result. The cookies, once filled, need to be refrigerated, as the filling softens rather quickly. I used Trader Joe's sea salt caramels and did not add any additional salt to the filling. Both filling and unfilled cookies may be frozen separately. A favorite!
