    This recipe does not use the entire amount of pastry dough for the quantity of filling. You can spread the steps out over several days if needed, and they are definitely worth the work. They are spectacular cookies, delicious, light as air. and don't throw out the caramelized sugar that bubbles around the cookie as it bakes - just trim it off and enjoy as a cook's treat.
