Gluten-free blueberry mini muffins from The Longevity Kitchen: Satisfying, Big-Flavor Recipes Featuring the Top 16 Age-Busting Power Foods by Rebecca Katz and Mat Edelson

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Absolutely delicious and incredibly quick and easy! I always hesitate a bit about cookbooks with titles like "Age-Busting" or "Power Foods" but Rebecca Katz truly does create delicious food that is also healthy.

I do not eat gluten free, but I have a good friend who does. I bought this book for her birthday and made these muffins for her. They are good, but not nearly as nice as my regular blueberry muffin recipe. I'm glad I do not need to eat gluten free - the almond flour and maple sugar cost a fortune!

Being a mom of a recently diagnosed child with juvenile diabetes, I am on the constant lookout for healthy treats that do not cause high blood sugar spikes, and these definitely fit the bill. I did not grind the almonds that finely to add a little crunch, substituted agave syrup for honey, and reduced the maple sugar by one third. Delicious little treats which will go into the regular rotation!
