    With temperatures in the 80s, a summertime meal was called for. This dish hit the mark. The relish is delicious and very easy to assemble. I think it would also go well with white fish. It also lends itself to added ingredients -- two that come to mind are capers and diced red onions. On the other hand, it's great just the way it is. Next time, though, i will double the mint. This will definitely become a staple at our house this summer.
