Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

    Super easy and satisfying weeknight dinner. Mashed pinto beans may need some salt and a little water added to achieve the right spreadable consistency. We also added chopped scallions, sour cream and cilantro as toppings. Healthy too, if you use whole wheat tortillas and go easy on the sour cream!
