    I simplified this recipe a bit. I didn't make my own chocolate chips, but used good quality mini dark chocolate chips. Other than that, I used all the rest of the ingredients as written. 80 grams of fresh mint is a lot of mint! I used all that I had growing in a pot on our deck and came up a little short, so I added just a little peppermint extract. If you do this, I recommend adding just a little extract to the custard base and tasting til you have the minty level you like. I followed the instructions for the ice cream base,chilling overnight,and freezing in the morning in my ice cream maker,adding the chips during the last 5 minutes. Absolutely delicious!
