    These are one of my favorite ways of cooking potatoes. The recipe was created by Jill Dupleix (Ree Drummond does credit her). I tend to top mine with sea salt, pepper and fresh minced rosemary. But really most flavorings would work.

    Absolutely loved these — and they're so easy. I boiled for about 10 minutes before smushing them, which worked out well. They came out sort of like fancy "smiley fries" with the crisp outside and mashed inside. I seasoned them with salt, pepper, red pepper flakes, basil, garlic powder, and grated parmesan. I'd definitely make these again, and I'd love to try out other combinations of seasoning.
