    Must be started 3 days before serving. Can substitute 2 whole ducks cut into quarters for duck leg quarters, dried thyme for thyme, smoked ham hock for ham bone, and flour tortillas for corn tortillas. Baby lettuces should be a combination of bibb, endive, romaine, etc.
