    Bay Shrimp Sandwich 217 Croissants split and toasted, shrimp salad: 1/2 head little gem lettuce in chiffonade, 1/2 lemon cut in thin slices with mandolin, 3/4 to 1 lb cooked bay shrimp, 1/2 c finely chopped fennel, 1/2 c chopped fennel tops, 1/2 c finely chopped celery hearts, 1/2 c finely chopped celery leaves, 2 T mayo, 1 T crème fraiche, 2T trout roe
