    This was a good way to hide the taste of beets if you don’t like beets. I can see this being a good counterpoint to a roasted protein.

    We love this salad! The longer it sits the better it gets. Sometimes we stir in a little creme fraiche.

    I cubed the beetroot, tiny cubes, instead of grating. The dressing is sweet and mustardy, and very good.
