    This gravy turned out to be one of the best turkey gravies I’ve ever made. I was using the turkey drippings from the roasting pan as the turkey rested so I didn’t have time to cook it down for an hour and a half. Instead I reduced the liquid and the flour and it was wonderful. Next year I will try making it the day before and do the slow simmer. I used 1 cup wine, 2 cups chicken broth and 1 cup water plus 1/2 cup flour. Some of the flavor probably came from my turkey rub from the Nov. 2017 Food and Wine recipe Spatchcocked Turkey with Pink Peppercorns and Thyme.
