    This is a very easy, quick, and good-tasting soup. Flavors are relatively gentle/familiar, but we didn't find it to be boring. I substituted homemade chicken stock for the water called for in the recipe and would do so again. I didn't make the croutons, but I'm sure they'd be great and would add some crunch to an otherwise very smooth soup. Note that although the recipe says it yields 6 servings, portion sizes at that number of servings are modest (a bit more than 1 cup of soup) - if served as the center of a meal, this yields more like 3-4 servings for us.
